This is one of my favourite 5 minutes dishes. Just mix everything, take whatever veggies you have (the more colour the more antioxidants) and cook some buckwheat pasta. Mix everything and voila`; there´s your dinner! Just because the dinner goes so fast to make that doesn´t mean that the taste is less. I would say in this case that it´s the other way around. The walnuts with the garlic the hot pepper, the cold pressed oliveoil…it´s hard to find a better mixture I promise. Try it out with cooked quinoa, or just as a spread on a piece of bread – it really tastes amazing!
Creamy Walnut and Buckwheat Pasta Salad

Ingredients
- 2 dl Whole, Wonderful Walnuts, washed and soaked overnight
- 2 dl chick peas, cooked
- 2 chopped garlic cloves
- 1 dl cold pressed olive oil
- 1 dl filtered water
- 1 TBS miso
- 1 tsp mineral salt
- 1 tsp hot red pepper
- 1 tsp black pepper
- 4 portions of cooked buckwheat pasta
- 100 g fresh baby spinach
- 2 red bell pepper, chopped
- 1 sliced red onion
Directions
Mix walnuts, chick peas, garlic cloves, olive oil, water, miso, salt, red pepper and black pepper in a bowl until you get a smooth cream. If necessary add more water. In a big bowl, mix the buckwheat pasta with the walnut mixture (with a spoon) and then mix in everything else. Divide onto 4 plates and enjoy!
