  • Chocolicious Coconut Mousse

    Oh luscious chocolate mousse, how we love thee...Whether you're throwing a fancy schmanzy dinner party or just giving yourself a special treat, you can't go wrong with this classic dessert. But sometimes it's fun to give an old favourite a makeover and a fresh new flavour. Chocolate and coconut compliment each other perfectly and combining the two is what gives this Chocolicious Coconut Mousse that little extra oomph. This recipe is both vegan and gluten-free, but we assure you that you don't have to eat a plant-based or grain-free diet to appreciate the creamy deliciousness and smooth, chocolatey sensation of this decadent dessert!

    Refrigerate the can of coconut milk overnight so that the cream separates from the liquid. This part can be just a tad tricky if there are stabilizers in the coconut cream to prevent it from separating, but don't fret. The coconut flour will help thicken up the mousse if the cream doesn't fully separate. The next day, scoop out the hardened coconut cream, leaving the liquid in the can, and put it in a mixing bowl. Add the coconut flour, powdered sugar and vanilla extract and mix them together. Melt the chocolate and the coconut oil in a saucepan on the stove, then let it cool off for a few minutes. Carefully pour the chocolate in the coconut cream while stirring gently until the ingredients are well mixed. Scoop the mousse into individual cups (the recipe makes enough mousse for four small or two large servings) and garnish with coconut chips and raspberries.

  • Delightful (and Healthy!) Dark Chocolate Dreams

    We're so excited about these Delightful Dark Chocolate Dreams, and if you love chocolate as much as we do, you should be excited too! This recipe, like so many others (for example these Ch'almost Chocolate Power Balls), stem from some pretty intense chocolate cravings combined with a desire to eat healthy. Because even though the team here at This Is Nuts is all about eating healthy and living an active lifestyle, we love to indulge a little. These chocolate treats have that perfect crunch and natural sweetness that you can always expect from our all-natural products, and they are melt-in-your-mouth delicious.

    This Is Nuts - Dark Chocolate Dreams

    The best part of this treat is that it kills cravings, while at the same time providing your body with some pretty good stuff, including protein, heart-healthy fats and loads of essential vitamins and minerals. Just be sure to use dark chocolate, since milk chocolate have none of the antioxidants or other powerful nutrients found in dark chocolate. The downside? There really isn't one, except for the fact that they're HIGHLY ADDICTIVE. You can't say we didn't warn you...

    Chop the pistachios and then the dates finely in a food processor. Combine the pistachios, dates, goji berries, cacao nibs and coconut chips in a bowl and set aside. Melt the chocolate and coconut oil stovetop on low heat, while stirring continuously to prevent the mixture from burning. (Another option is to use a double-boiler, i.e. melt the chocolate in a bowl that is placed in a pan of simmering water, but this isn't necessary.) Pour the melted chocolate and coconut oil onto the fruit and nut mix and stir until the mix is nice and even. Use a couple of spoons to dole it out on a cookie sheet. Refrigerate for 20 minutes before eating. Prepare to descend into pure bliss!

  • Raw Apple Pie with Walnuts

    This raw apple pie is definently one of my favourite desserts (yes I know I have a lot of favourites, but that is OK). I learned how to make it from my rawfood teacher who is an expert on desserts! I modified the recepie a little but it still has her touch too. We usually make this pie when we want to cozy up in front of the tv and watch a movie. The pie isn't big but it definitely serves 8 persons. I always make the pie with Granny Smith apples, because of their slight tartness. The cake has a lot of dates, and the apples prevent it from getting too sweet. And with the Whole, Wonderful Walnuts…what can I say it just tastes amazing! You really have to try it to understand what I'm talking about. And it's a super easy recepie.

    Raw Apple Pie with Walnuts

    Directions

    Process the first three ingredients in a food processor for about 10 minutes. Press into a pie dish. If you want to, you can put the crust in a dehydrator for about 10 hours (I always do) but you can go directly to step 2. Process the dates, zest and cinnamon in a food processor. Then combine all the remaining ingredients in a large bowl. Blend it well. Put everything in the pie crust and press it down a little bit. Slice the apple thinly with a knife or a mandolin slicer and decorate the pie with the apples and whole walnuts. Put the pie in the refrigerator for at least 2 hours before serving. I always serve mine with a delicious raw vanilla sauce.
