  • Delightful (and Healthy!) Dark Chocolate Dreams

    We're so excited about these Delightful Dark Chocolate Dreams, and if you love chocolate as much as we do, you should be excited too! This recipe, like so many others (for example these Ch'almost Chocolate Power Balls), stem from some pretty intense chocolate cravings combined with a desire to eat healthy. Because even though the team here at This Is Nuts is all about eating healthy and living an active lifestyle, we love to indulge a little. These chocolate treats have that perfect crunch and natural sweetness that you can always expect from our all-natural products, and they are melt-in-your-mouth delicious.

    This Is Nuts - Dark Chocolate Dreams

    The best part of this treat is that it kills cravings, while at the same time providing your body with some pretty good stuff, including protein, heart-healthy fats and loads of essential vitamins and minerals. Just be sure to use dark chocolate, since milk chocolate have none of the antioxidants or other powerful nutrients found in dark chocolate. The downside? There really isn't one, except for the fact that they're HIGHLY ADDICTIVE. You can't say we didn't warn you...

    Delightful Dark Chocolate Dreams

    Chop the pistachios and then the dates finely in a food processor. Combine the pistachios, dates, goji berries, cacao nibs and coconut chips in a bowl and set aside. Melt the chocolate and coconut oil stovetop on low heat, while stirring continuously to prevent the mixture from burning. (Another option is to use a double-boiler, i.e. melt the chocolate in a bowl that is placed in a pan of simmering water, but this isn't necessary.) Pour the melted chocolate and coconut oil onto the fruit and nut mix and stir until the mix is nice and even. Use a couple of spoons to dole it out on a cookie sheet. Refrigerate for 20 minutes before eating. Prepare to descend into pure bliss!

  • Raw Apple Pie with Walnuts

    This raw apple pie is definently one of my favourite desserts (yes I know I have a lot of favourites, but that is OK). I learned how to make it from my rawfood teacher who is an expert on desserts! I modified the recepie a little but it still has her touch too. We usually make this pie when we want to cozy up in front of the tv and watch a movie. The pie isn't big but it definitely serves 8 persons. I always make the pie with Granny Smith apples, because of their slight tartness. The cake has a lot of dates, and the apples prevent it from getting too sweet. And with the Whole, Wonderful Walnuts…what can I say it just tastes amazing! You really have to try it to understand what I'm talking about. And it's a super easy recepie.

    Raw Apple Pie with Walnuts

    Ingredients

    Directions

    Process the first three ingredients in a food processor for about 10 minutes. Press into a pie dish. If you want to, you can put the crust in a dehydrator for about 10 hours (I always do) but you can go directly to step 2. Process the dates, zest and cinnamon in a food processor. Then combine all the remaining ingredients in a large bowl. Blend it well. Put everything in the pie crust and press it down a little bit. Slice the apple thinly with a knife or a mandolin slicer and decorate the pie with the apples and whole walnuts. Put the pie in the refrigerator for at least 2 hours before serving. I always serve mine with a delicious raw vanilla sauce.

  • Blissfully Addictive Cranberry Scones (Gluten-Free)

    Yes, I know. I love experimenting with bread, and especially for breakfast. This recipe actually came up because of my cravings for cranberries and almond flour this week. You have no idea how good they are together! The almond flour is a little bit sweet and the cranberries are tart so they make for a perfect combination! But you can use whichever berries you like – you are going to be hooked on these scones no matter what. If you don't want to make them every week – please do not try them at all because they really are addictive.

    Blissfully Addictive Cranberry Scones

    Makes 4 scones

    Ingredients

    • 2 ½ dl Soft-Ground Almond Flour
    • 2 tsp baking powder
    • 2 tsp psyllium (ground)
    • 1 tsp vanilla powder
    • ½ tsp mineral salt
    • 2 TBS Organic Love Coconut Oil (room temperatured)
    • 1 dl coconut yoghurt (or any other yoghurt you prefer)
    • 1 dl frozen cranberries

    Directions

    Preheat the oven to 225 degrees. Mix the flour, baking powder, psyllium, vanilla powder and salt in a bowl. Then blend the dry ingredients with coconut oil and coconut yoghurt. When the dough is smooth, gently stir in the cranberries with a spoon. Divide the scones into four pieces and shape them into scones. Place them in a pan lined with a baking sheet and bake them in the oven for 10 minutes. Then sit back and enjoy your breakfast. Bliss!
