    Pecan and Golden Berry Raw Balls

    Ingredients:

    200 gr Uncannily Good Pecans

    175 gr Delicious Dates

    100gr Delicious & Sweet Apricots (soaked in water for an hour)

    1 handful of Size Doesn't Matter Golden Berries

    3 tbsp Organic Love Coconut Oil

    2 tsp vanilla extract

    100 gr shredded coconut

    A touch of salt

    Directions:

    Grind the nuts and fruits in a food processor and pour them into a medium size bowl. Add the rest of the ingredients and mix until smooth. Add more coconut oil if the mixture is too dry. Dry roast the shredded coconut in a frying pan and pour it onto a plate. Make balls out of the nut mixture and roll them in the shredded coconut. Enjoy!

Not only are they filling, they're also the perfect answer to those pesky sugar cravings that always seem to come creeping at night. Whip up a batch of these irresistible crunchy treats and keep them in the fridge for a healthy, raw snack that is full of rich chocolate flavor.

    Speaking of chocolate, this recipe calls for a *secret* ingredient.

    Ch'almost Chocolate Cacao Nibs

    If you've never used raw cacao nibs before, now is the time to acquaint yourself with these nutrient-packed babies. Cacao nibs are dried, roasted and crushed cacao beans, essentially chocolate in its most raw, pure form. They're full of antioxidants and phytonutrients, which help your body fight harmful free radicals. They're also an excellent source of essential minerals such as manganese, copper, iron and fibre. Unlike the kind of chocolate that you'd usually use for chocolate chip cookies or eat in the form of a chocolate bar, cacao nibs aren't sweet, but slightly bitter. Use them for baking, homemade snacks and even cooking for a savory, chocolatey flavour!     Ch'almost Chocolate Power Balls

    To complement the robust flavour of the cacao nibs and sweeten these Chocolate Power Balls naturally, we've added dates, shredded coconut and maple syrup to the mix. For moisture and texture, we're using coconut oil instead of butter, making this a completely vegan treat.

    Ch'almost Chocolate Power Balls Mixture

    Add in some cocoa powder and almond flour and boom, you've got yourself a healthy, raw chocolate snacks in 10 minutes or less. The texture and flavour of the finished treats is reminiscent of the oat-based chocolate balls kids love to make (Swedish Chocolate Balls), but without the butter and refined sugar. Think of it as the adult version of chocolate balls. If you're a coffee lover, you might want to try adding a dash of espresso to the mix as well. All the flavour without the guilt.

    1. Chop the dates and cocnut flakes finely in a blender.
    2. Pour the date and coconut flakes mixture into a bowl and add the rest of the ingredients.
    3. Work the batter with a wooden spoon until smooth. Add more coconut oil if the texture seems too dry.
    4. Roll the batter into small balls and roll them in coconut flakes.
    5. Refrigerate before eating (or dive in right away if you can't stand the wait!).

  • Heavenly Cranberry Pies (Vegan, Gluten-Free)

    As we recently announced, raw food chef, sports nutritionist and cookbook writer Mekto Ganic´ has joined This Is Nuts as a recipe creator and product developer, and from now on you'll be able to enjoy her amazing creations on the blog every week. First up are these vegan, gluten-free cranberry pies - a delectable and healthy treat that is perfectly in line with our motto 100% pleasure, 0% guilt. This is what Mekto has to say about the pies:

    "Crazy Cranberries was the first This Is Nuts product that I tried, so I thought it would be fitting to use them for the first recipe that I share on this blog. Enjoy them - I did!"

    Crazy Cranberry Pies

    Heavenly Cranberry Pies

    4 pies

    Ingredients

     

    Crust:

     

    Filling:

    • 1 avocado
    • 1 frozen banana
    • 3 TBS cocoa powder
    • 1 TBS Kick-Ass Chia Seeds
    • 1 TBS green stevia powder
    • Approx. 1 dl filtered water
    • 1 TSP vanilla powder
    • A dash of mineral salt

     

    Topping:

    • 1 dl berries of your choice

     

    Directions:

    Mix all the ingredients for the crust in a food processor and set aside for 5 minutes. Place the crust in four pie dishes (approx. 7 cm in diameter). Cover with plastic wrap and press the crust with your fingers until it is evenly spread out in the pie dish. Place the dishes in the freezer while preparing the filling. Place all the ingredients for the filling in a blender and run it at low speed to start with. Continuously increase the speed until the filling turns into a thick cream. Add the filling to the pie crusts and place them in the freezer for 5 minutes. Decorate with berries and serve!
